Through the pioneering program “Regenerating Lassithi Plateau and Its People – Towards a Sustainable Food Destination” Metaxa Hospitality Group is shaping, for the first time within hospitality services, a resilient, regenerative, and environmentally friendly food system with measurable environmental, social, and economic benefits for all stakeholders.
We recognize the potential of the local ecosystem and believe that the Lasithi Plateau can evolve into a model agri-food destination that fully utilizes the carrying capacity of its plant and livestock production.
Our vision is to support the transition of the Lasithi Plateau — one of the largest agricultural regions of Crete and Greece, featuring a unique natural ecosystem — toward Organic Regenerative Agriculture.

Beyond the obvious environmental benefits, regenerative agriculture can create new opportunities for income generation and innovation in the primary sector, encouraging people to remain in or return to their homeland, especially as many rural areas worldwide face desertification risks.
Through this initiative, the Group actively supports the local community and seeks to create a positive example capable of inspiring similar synergies between tourism and the primary sector.

The initiative primarily targets local producers of the Lassithi Plateau, who receive training in Organic Regenerative Agriculture practices, as well as younger generations of farmers, who are provided with innovative agricultural education regarding regenerative cultivation practices, thereby strengthening the Group’s long-term relationship with the local community.
The program also addresses guests of Metaxa Hospitality Group hotels, who enjoy products originating from regenerative agriculture while simultaneously being educated on adopting more sustainable gastronomic choices in their everyday lives.
At the same time, the Group actively informs and engages its ecosystem of partners in the agri-food and tourism sectors, encouraging new opportunities for collaboration with long-term environmental, social, and economic benefits for the wider community.
In addition, the program “Regenerating Lassithi Plateau and Its People – Towards a Sustainable Food Destination” served as inspiration for the film “2258: A Story About the Regeneration of Earth,” an independent production by EyeQ Creative Media created with the support of Metaxa Hospitality Group.
This unique research-based production explores in depth the global consequences of soil degradation, the climate crisis, current consumption models, the sustainability of food production systems, and the regenerative potential within agriculture and tourism. Its purpose is to function as a tool for outreach, awareness, and inspiration while broadening the discussion about the future of regenerative tourism.
The program began in 2023 and continues to evolve dynamically, showing significant annual growth both in the number of participating producers and in the scale of organic regenerative production.
Its environmental, social, and economic performance is evaluated annually, confirming its development prospects.
Through the innovative program “Regenerating Lassithi Plateau and Its People – Towards a Sustainable Food Destination” Metaxa Hospitality Group actively connects organic regenerative food production with the hospitality sector, placing soil health at the center of its strategy.
Soil is a non-renewable natural resource whose health is continuously deteriorating worldwide, mainly due to intensive cultivation and the worsening climate crisis, putting global food security at risk unless immediate action is taken.
It is estimated that within the next 50 years there may be no cultivable soil left on the planet capable of producing food. This is particularly significant considering that 95% of our food originates from soil.
Organic regenerative agriculture is considered by experts to be one of the most reliable ways to restore soil health. Its core principles include minimizing soil disturbance, crop rotation for diversity, maintaining soil cover through natural vegetation for protection, preserving root systems year-round, and integrating livestock into cultivation wherever feasible. This approach contributes to carbon sequestration, increased crop yields, and improved health and well-being of rural communities.
As part of the Metaxa Hospitality Group program, implemented since 2023 in collaboration with the Lassithi Plateau Agricultural Cooperative and with the contribution of Local Food Experts, local producers are trained on-site at the Lassithi Plateau by specialized agronomists and apply organic regenerative farming principles in their fields. The resulting products, distinguished by exceptional taste and higher nutritional value, are used as ingredients by the Group’s hotel chefs and served to guests, who enjoy an upgraded gastronomic experience and connect authentically with the destination hosting them.
By linking organic regenerative food production with gastronomy, hotel guests gain awareness of how the food on their plates contributes to restoring soil health, water resources, and biodiversity. Through experiential and educational activities in the hotel gardens, they participate in planting, harvesting, and other farming tasks, and often cook alongside the chefs using ingredients produced through organic regenerative practices.
To date, more than 40 stremmas (approximately 4 hectares) of agricultural land on the Lassithi Plateau have been regenerated, while over the last three years the Group has absorbed approximately 90 tons of fresh fruits and vegetables cultivated according to organic regenerative agriculture principles.
Metaxa Hospitality Group, recognized as the first hospitality group in Greece with organic regenerative hotel lands certified under the O.R.A. (Organic-Regenerative Agriculture) Standard by DIO (the official National Organization for Inspection and Certification of Organic Products), has been implementing the principles of organic regenerative agriculture since 2011, contributing to healthy soil systems.
Within the framework of the “Sustainable Hotel Farming” program, 75 varieties of organic fruits, vegetables, and herbs have been cultivated for years in the Group’s hotel gardens in Crete and Santorini. At the same time, the Group applies regenerative landscape management practices certified under EU Regulation 2018/848 for Organic Agriculture across approximately 2,000 stremmas of land, one of the largest such areas in Europe.

The initiative has already delivered measurable results:
As of May 2026, 10 producers participate in the program, applying Organic Regenerative Agriculture practices across more than 40 stremmas of agricultural land, cultivating 12 categories of fruits and vegetables according to EU Regulation 848/2018. Over the past three years, the Group’s hotels have absorbed approximately 90 tons of fresh produce.

Local Food Experts
Local Food Experts is a social cooperative enterprise based in Heraklion, Crete, operating in the fields of sustainable agri-food systems, tourism, and education. Its team, consisting of specialists in agriculture, tourism, and sustainable development, collaborates with local producers and businesses to promote local products and strengthen the local economy. LFE provides training in agricultural practices, supports the development of local enterprises, and promotes the connection between tourism and local production, enhancing sustainability and social responsibility.
Lassithi Plateau Agricultural Cooperative
The Lassithi Plateau Agricultural Cooperative, headquartered in Tzermiado, is one of the most historic and productive cooperatives in Crete. With 300 members, mainly livestock breeders and farmers, it produces high-quality products such as feta cheese, graviera, yogurt, and mizithra under the brand name “Dikti.” Annually, it processes approximately 1,500 tons of milk from 25,000 sheep, producing 200–250 tons of cheese products distributed to the market.
As part of the collaboration with Metaxa Hospitality Group, the following actions are implemented annually:
Selection of suitable agricultural plots and guidance for producers in accordance with EU Regulation 2018/848 on Organic Agriculture
Collaboration with producers and the Group’s procurement departments to create specialized cultivation plans including required quantities, products, and delivery schedules
Training participating producers in organic regenerative agriculture practices adapted to the conditions of the Lassithi Plateau
Continuous evaluation of cultivation practices to optimize and adjust methods for ideal results
Distribution of products cultivated through regenerative practices to the Group’s hotels, offering guests an authentic gastronomic experience
Employees of Metaxa Hospitality Group actively participate in shaping and implementing the initiative. Chefs and procurement teams contribute to designing specialized cultivation plans, selecting products, and creating dishes that utilize regenerative products, offering guests an authentic gastronomic experience.
Program managers monitor and evaluate the initiative’s progress, ensuring compliance with quality and sustainability standards. Through continuous education and guidance, employees gain a deeper understanding of regenerative hospitality and its contribution to the local community and environment.
